This project aims to reduce the growth of Clostridium bacteria in silage and improve the microbiological quality of milk for processing.


Project summary

Spore-forming thermoduric bacteria in silage are one of the major problems facing the dairy industry. These bacteria can find their way into fermented dairy products, causing major defects in taste and texture, and resulting in considerable economic losses. 

As part of this project, various natural ingredients based on lactic acid bacteriocins will be developed, characterized and tested for their effectiveness in controlling Clostridium bacteria in silage. One of the objectives is to demonstrate the inhibitory activity of bacteriocin-based formulas against Clostridium and measure their impact on silage quality and stability.

The approach proposed in this project will provide a highly promising new strategy for controlling thermoduric bacteria in silage and preventing contamination of dairy products and associated losses. 


Expected results

This work will generate unique scientific data on the potential of natural antimicrobial compounds (bacteriocins) for controlling undesirable flora in silage. 

Strain characterization will help us understand the role of bacteriocins in the spoilage of Quebec silages and fermented dairy products. 

The development of antimicrobial ingredients will make it possible to:

  • Control thermoduric bacteria in silage, with the aim of reducing economic losses due to undesirable fermentations
  • Improve dairy cattle productivity
  • Provide milk of better microbiological quality

Reducing the incidence of spore-forming butyric bacteria would reduce the taste and texture defects caused by these bacteria, and thus limit the resulting economic losses.
